I tried reinstalling Outlook and the O365 profile/account. The error noted it was an O365 Server Error of some type.

My issues was apparently a corruption in the 'Keychain' file. I can't find the exact link (sorry.) in this forum, but someone had put instructions about deleting entries from Keychain Access under LOGIN for exchange and O365. Of course, then you have to re-add them. However, once that bit of work was done, now everything is back to normal and Outlook now stays connected to O365.
